General Tso’s Shrimp and Broccoli
Ingredients:
1 lb shrimp, peeled, deveined, and tails removed
1 cups broccoli, cut into florets
1/3 cup Heinz reduced-sugar ketchup
1 clove minced garlic
3 tbsp Bragg Liquid Aminos (or soy sauce)
2 tbsp white vinegar
2 tbsp Lakanto Monkfruit Sweetener
1 tbsp crushed red pepper
1 tbsp olive oil
1 tbsp toasted sesame seeds
salt and pepper, to taste
Directions:
In a skillet over medium heat, combine garlic, liquid aminos, vinegar, sweetener, and ketchup.
Bring to a boil and then turn off heat.
Steam broccoli until tender in a large pot fitted with a rack.
In a medium mixing bowl, season shrimp with salt and pepper.
Heat a large skillet over medium-high heat.
Add olive oil and cook shrimp until golden and cooked through.
Spoon sauce over shrimp and stir-fry until slightly caramelized.
Garnish with optional sesame seeds.
Serve on top of steamed broccoli.
