Coconut Blondies
Ingredients:
1/2 cup + 1 tbsp coconut oil, melted
1/2 cup coconut butter, softened
1/4 cup + 3 tbsp golden monk fruit sweetener
3 tbsp + 1 tsp coconut flour
1 1/2 tsp pure vanilla extract
2 tsp cream of tartar
1 tsp baking soda
2 eggs, room temperature
1/4 cup unsweetened coconut flakes
Directions:
Preheat oven to 325 degrees and line 8×8 baking pan with parchment paper.
To a mixing bowl, add coconut oil, coconut butter, golden monk fruit sweetener, coconut flour, vanilla extract, cream of tartar, and baking soda and mix with an electric mixer until well-combined. Add eggs and mix again with an electric mixer.
Transfer mixture to the prepared baking pan, smooth out with a spatula, and top with coconut flakes.
Bake blondies until a toothpick can be poked into the center and come out cleanly about 20-25 minutes.
Allow to cool completely prior to cutting and serving.
