Keto Zucchini Tots

Ingredients:

1 ½ cups shredded zucchini, water drained (about 1 medium)
1 cup shredded mozzarella cheese (cheddar also works well)
⅓ cup Parmesan cheese
1 teaspoon salt
¼ teaspoon ground black pepper
¾ teaspoon garlic granules (or powder)
½ teaspoon onion granules (or powder)
2 large eggs

Directions:

Get out a mini-muffin tin or baking sheet and a large bowl. Spray the mini-muffin pan with avocado or coconut oil and preheat the oven to 350 degrees F.

Lightly salt the shredded zucchini and let sit for 5 minutes. Wrap in a tea towel and squeeze out all the excess water or press in a colander.

Place the grated mozzarella cheese, shredded zucchini, and Parmesan cheese in the bowl and mix with a spoon or spatula until everything’s evenly dispersed.

Sprinkle over the mixture the salt, pepper, garlic granules, and onion granules and mix it together well so there are no lumps.

Crack the two eggs into a bowl and whisk them together using a small whisk or fork. Once blended well, transfer the eggs to the zucchini mixture and stir to combine.

Use a small cookie scoop or tablespoon to spoon rounded tablespoons into the mini-muffin tin. If you don’t have a mini-muffin pan, spoon them onto a lined baking sheet.

Bake in the preheated oven for 20-25 minutes or until the tops just start to brown.

Let cool for 5-10 minutes when removed from the oven then plate or move to a cooling rack.

Serve with sugar-free marinara sauce or ketchup.

Air fryer instructions: To use an air fryer, spoon the rounded tablespoons of the zucchini mixture onto the air fryer plate or tray. Air fry or air crisp at 390 degrees F for 10 minutes. Open the lid to cool slightly for five minutes then serve.
