Crustless Zucchini Quiche

Ingredients:

6 large eggs
4 cups shredded zucchini about 2 medium
3/4 cup almond flour
1/4 cup coconut flour
1 cup shredded cheddar cheese
1/2 cup coconut oil
2 tablespoons fresh parsley chopped
2 tablespoons grated parmesan cheese
1 tablespoon minced dry onion
2 cloves garlic minced
1/2 teaspoon dried basil
1/2 teaspoon salt

Directions:

Preheat oven to 350°F and grease a 9.5-inch pie plate.

Combine all ingredients in a large bowl then pour into prepared pie plate.

Bake at 350°F for 45-60 minutes or until fully set.

Remove from oven and cool on a rack.
