Cauliflower Rice Stir Fry
Ingredients:
1 tablespoon avocado oil
3 cloves garlic minced
2 teaspoons minced ginger
20 ounces frozen riced cauliflower
2 cups frozen stir fry vegetables see note
2 tablespoons soy sauce plus more to taste
1 teaspoon chili paste plus more to taste
2 teaspoons toasted sesame oil
ΒΌ cup chopped green onions
Directions:
Heat the oil in a large, deep skillet or wok over medium heat.
Add the garlic and ginger and cook for 1 minute.
Add the cauliflower rice and vegetables to the skillet and cook, stirring often, for 5-8 minutes or until vegetables are tender-crisp.
Season with soy sauce and chili paste and stir well to combine.
Remove from the heat and drizzle with sesame oil and sprinkle with green onion.
Serve hot.
