Keto Shrimp Zoodle Alfredo
Ingredients:
1 tbsp. extra-virgin olive oil
1 lb. shrimp, peeled and deveined
3/4 c. heavy cream
3/4 c. freshly grated Parmesan
1 lb. zoodles
Kosher salt
Freshly ground black pepper
Directions:
In a large skillet over medium heat, heat oil. Add shrimp and cook until opaque, about 2 minutes. Remove shrimp from skillet and reserve on a plate.
Return skillet to medium heat and add heavy cream and Parmesan and bring to a simmer. Let simmer until thickened, 3 to 5 minutes.
Add zoodles and shrimp and season with salt and pepper. Toss to combine and cook until zoodles are tender, about 2 minutes more.
