Low Carb Marinara Sauce

Ingredients:

4 oz. tomatoes (fresh or canned)
2 Tbsp. olive oil
1 small onion (peeled & chopped)
3 cloves garlic (peeled & chopped)
2 Tbsp. tomato puree
1 Tbsp. oregano
1 Tbsp. dried parsley
1/3 cup Parmesan cheese (grated)
2 bay leaves
1/2 tsp. salt
1/2 tsp. black pepper

Directions:

Heat the oil in a saucepan on a medium heat. Add the garlic and onions and saute for 3 – 5 minutes until soft.

Add the tomatoes, oregano, parsley, bay leaves and bring to the boil.

Add the tomato puree, season with the salt & pepper,cover the saucepan with a lid and simmer for 20 minutes.

Remove the bay leaves.
