Low Carb Hot Chocolate (Sugar-free & Gluten-free)

Ingredients:

6 oz High quality sugar-free dark chocolate (chopped or sugar-free chocolate chips)
1/2 cup Unsweetened almond milk (or regular milk)
1/2 cup Heavy cream (or coconut cream for paleo)
1 tbsp Erythritol (can omit or use any sweetener of choice)
1/2 tsp Vanilla extract

Directions:

Heat almond milk, cream, and erythritol in a small saucepan over medium heat until it simmers gently. Remove from heat.

Stir in vanilla extract and chocolate. Whisk constantly until melted. Pour into espresso cups to serve.
