Keto Shortbread Cookies

Ingredients:

1 1/4 cups almond flour
4 tbsp Lakanto Golden Monkfruit Sweetener
3 tbsp butter, softened
1/2 tsp vanilla extract
1 pinch pink Himalayan salt

Directions:

Preheat oven to 350°F

In a medium bowl, mix almond flour, sweetener, and salt.

Add butter (in small chunks) and vanilla; continue mixing.

Knead dough mixture into a ball.

Using your hands, pinch off chunks of dough and roll into balls (about an inch each).

Place on a baking sheet with a silicone liner and press slightly with the palm of your hand.

Bake for 8-10 minutes until barely starting to brown.
