Pork Egg Roll In A Bowl

Ingredients:

1 lb ground pork
1 package 12 oz coleslaw mix or 1/2 head green cabbage (thinly sliced)
1 cup carrots (shredded) only if using the shredded cabbage
1/4 cup yellow onion (chopped)
3 garlic cloves minced
1 tsp ground ginger or 2 tsp fresh ginger minced
¼ cup soy sauce
2 teaspoons rice wine vinegar
1 1/2 teaspoons brown sugar, palm sugar, or honey
1 tbsp sesame oil
½ bunch green onions chopped (for garnish)
fresh cilantro leaves, optional (for garnish)
salt & pepper to taste
Sriracha (optional)
Sweet chili sauce (optional)
Bean sprouts (optional)

Directions:

Put soy sauce, sesame oil, minced garlic, minced ginger, rice wine vinegar, and sugar in the cup and stir to combine. Set aside.

Spray a large non-stick frying pan with cooking spray and heat over medium-high heat. Add ground pork and cook, stirring occasionally, for 5 minutes, or until cooked through. Season with salt & pepper to taste.

Add the coleslaw mix and the sauce from a cup to the frying pan and stir to combine with the meat. Cook, stirring occasionally, for 5 minutes.

Remove from the frying pan and serve. Garnish with chopped green onions and cilantro. Top with bean sprouts, sriracha, and sweet chili sauce if desired.
