Chocolate Protein Pancakes

Ingredients:

1/2 cup Whey protein powder (or collagen, or egg white protein powder)
1/2 cup Blanched almond flour
3 tbsp Cocoa powder
3 tbsp Erythritol (or sweetener of choice)
1 tsp Gluten-free baking powder
4 large Eggs
1/3 cup Unsweetened almond milk
2 tbsp Avocado oil (or melted coconut oil)
1 tsp Vanilla extract
1/8 tsp Sea salt

Directions:

Mix all ingredients together. Let the batter sit for 5 minutes.

Preheat a pan over medium-low heat. Squeeze batter into the pan to form small circles (3 inches in diameter). Cover with a lid and cook for a couple of minutes, until bubbles form on top. Use a very thin turner to carefully flip the pancakes, then cook for a couple of minutes on the other side.

Repeat with the remaining batter.
