Hamburger Stew

Ingredients:

2 tablespoons olive oil
2 pounds ground beef
1 small onion chopped
3 cloves garlic minced
32 ounces beef bone broth
15 ounce pumpkin puree canned or fresh
10 ounces radishes chopped
4 stalks celery sliced
1 1/2 tablespoons sea salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon parsley flakes
1/2 teaspoon marjoram
1/4 teaspoon sage
10 ounces fresh spinach chopped **

Directions:

Stove-Top:
Heat oil in Dutch oven over medium heat. Add ground meat, onion, and garlic. Cook until meat has browned.
Add in broth, pumpkin, radishes, celery, and spices. Bring to a boil. Reduce heat and let simmer covered for 20 minutes.
Add spinach and cook covered for another 10 minutes. Adjust seasonings as needed.

Crock Pot:
Brown ground meat with onion and garlic then transfer to the slow cooker if needed.
Add in broth, pumpkin, radishes, celery, and spices. Cook on low for 4-6 hours. Spinach can be added during the last 1-2 hours of cook time.

** Cabbage or kale can be used in place of the spinach. Cabbage can be added in with the radishes. Kale leaves would be added at the end of cooking similar to the spinach.
