Easy Italian Roast Beef

Ingredients:

3 pounds boneless beef bottom round roast
salt
black pepper
2 tablespoons extra virgin olive oil
1 tablespoon Italian herb seasoning
2 teaspoons garlic powder

Directions:

Remove beef from refrigerator and season liberally on all sides with salt and black pepper. Allow beef to stand at room temperature for 30 minutes before roasting.

Preheat oven to 400° F.

Line a roasting pan with aluminum foil and position a roasting rack inside. Set beef in center of roasting rack. Rub beef with olive oil. Coat top with an even layer of Italian seasoning and sprinkle with garlic powder.

Roast beef on middle rack of preheated oven for 20 minutes. Reduce oven temperature to 250°F. Continue roasting beef until meat reaches an internal temperature of 135-140°F for medium doneness, 90-120 minutes. (Pro tip: Roasting at a higher temperature allows for the outside to brown nicely, but leads to more moisture loss. Lowering the temperature allows for the rest of the cut of meat to cook through and retain more moisture.)

Check to see that beef is done. Remove from oven or add time as needed.

Allow beef to rest for 10 minutes. The internal temperature should reach 145°F. Transfer beef to a serving platter. Carve and serve.
