Crock Pot Cheeseburger Soup

Ingredients:

1 tablespoon olive or avocado oil
4 cloves garlic
1 small onion chopped
1.5 pound lean ground beef
2 cups diced celery about 8.3 oz
1 teaspoon dried basil
1 teaspoon dried parsley
32 ounces beef broth
2 cups cheddar cheese shredded
1 1/2 cups almond milk
1/4 cup sour cream
1/2 teaspoon salt or to taste
1/4 teaspoon pepper or to taste
salt and pepper to taste
1 pound cauliflower florets fresh or frozen

Directions:

Cook garlic and onion in skillet with hot oil until fragrant.

Add ground beef and cook until browned. Remove from heat and drain oil (if needed).

Transfer cooked beef into a 4 or 6 quart crock pot. Add remaining ingredients

Stir to combine ingredients. Cook on low 4-6 hours.
